Easy Paleo Bliss Balls
Today we are bringing you a delicious, Paleo bliss ball recipe from our friends at EasyOrganics.com.au
Easy to whip up, these gluten-free little beauties are packed with superfoods, omega 3, protein and carbohydrates. While we guarantee they will leave you feeling full and satisfied, they are so delicious we can’t guarantee you won’t want to go back for one more!
- ½ cup almond meal
- 1 tbsp coconut oil
- 150g organic dates
- 1 tbs vanilla seeds (or vanilla extract)
- Zest of 1 lemon
- Zest of 1 orange
- Chia seeds and coconut flakes for dusting
- 150g macadamia nuts (Note: you can‘activate’ overnight by immersing in filtered water and add 1tsp unpasteurised organic vinegar – then wash before use)
Use an electric mixer or a food processor, combine the dates, coconut oil and macadamia nuts. The mix will become sticky.
Fold the almond meal through the blended mixture until some of the moisture is absorbed and the moisture becomes manageable and only slightly tacky.
Divide the mixture into two batched on a clean chopping board. Then add your lemon zest and vanilla to one batch, and the lemon and vanilla to the other batch- ensuring that the batches stay separate.
Roll the two separate batches into small balls, and then toss in a bowl to coat the outside of the ball. We suggest coconut for the orange mixture and chia seeds for the lemon mixture.
Refrigerate for an hour before eating, then enjoy!
Cook’s notes: You can use hazelnut meal or substitute the macadamia for any other type of nut. Another variation is to also activate the chia seeds; and add them to the food processor in the first stage for increased nutritional benefit. The consistency may be a little sticky dependant on how the seeds and nuts have taken to the ‘activating’ process; therefore fold-in additional almond meal as required.
